Happenings By Carolyn Adriaansen (926-4436) Another update on Marion's Harvest Festival set for October 16: An addition to the Marion Historic Association's Traditional Crafts will be a bubbling pot of luscious fruit potion! The recipe for Apple Butter was given by Ina Benton and you will want to try a taste from an old family recipe. In her words...My recipe for apple butter- I put one quart of cider in my 6-quart heavy aluminum pressure cooker- When it boils down about half, I add about 6 cups of cut up peeled and cored apples. this your I am using Cortlands, one 20 oz. and a few Ida Reds. I cook this slowly over low heat, all the while wishing that I still had the old wood stove, I stir often, and as it thickens I add sugar, about 2 cups, and 2 tablespoons cinnamon, 1/2 teaspoon salt and 1 teaspoon cloves. I taste it and adjust the seasonings. I continue to cook and stir until its just right. then I can it in half pint jars or freeze it, or keep a bowl of it in the refrigerator. It keeps a long time. it's excellent on English muffins and home made bread toast and just to eat with any meat. *** Gary at Gary's Automotive is giving a $3 coupon for anyone who stops by for an oil change and Gigit at the Wee Town- USA will have the coffee pot on with delicious Gourmet Coffee so be sure to plan a stop at her newly acquired shop on South Main Street.
