I made four different pies over the Memorial Weekend (which will be in the next Marion Legion Baseball Cookbook ready for the printer). One that was given 'thumbs up' was the Transparent Pie: 4 eggs, 2 cups sugar minus 2 tablespoons, 2 tablespoons white corn syrup, 1 and 1/2 teaspoons vinegar, 1 tsp. vanilla, 1 stick butter, one 9-inch baked pie shell. In a heavy saucepan, mix and cook eggs, sugar, syrup, vinegar and vanilla over medium heat. Cut butter into small pieces and drop into mixture; cook until butter is melted. Pour mixture into pie shell. 350 degrees for 10 minutes, then 300 until all is firm except a small place in the center of the pie (about the size of an egg); take out of oven and let set, as it will finish cooking. Serve and enjoy!
