Chicken Under A Brick

4 cups fruit wood chips

2 whole chickens

2 tsp. fresh rosemary

3 large garlic cloves, thinly sliced

2 T. extra virgin olive oil

1 tsp. salt

1/4 tsp. pepper

4 bricks covered in heavy-duty foil

Combine wood chips and enough cold water in large bowl. Let stand 30 minutes. For charcoal: Ignite and burn 45-50 briquettes, 25-30 minutes until coals are covered with a light coating of gray ash. Drain wood chips, add to hot coals. Replace top cooking grate. Arrange chicken halves, skin side down, of cooking grate, top each with a foil covered brick.

Close lid, reduce heat to medium for gas and grill chicken over medium heat 15-20 minutes. Turn chickens, replace bricks and grill covered 10-20 minutes or more, or until an instant-read thermometer inserted in leg registers 180 degrees. Makes four servings.
