I forgot to serve the spinach squares at our family gathering!

You might like to make them for your next party. Good - warm or at room temperature.

Cheddar Spinach Appetizer Squares  

  • 4 oz. (1 cup) shredded cheddar cheese
  • 1/4 cup grated parmesan cheese
  • 1/4 cup flour
  • 1 and 1/2 cups half and half
  • 10 oz. pkg. frozen chopped spinach, squeezed to drain
  • three eggs, beaten
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 1/8 tsp. nutmeg

Combine cheeses and flour. Add half and half, spinach, eggs, salt, pepper and nutmeg. Mix well. Bake at 350 in 9x13 pan for about 45 minutes or until center is set.

(I received a gift set of measuring spoons for a dash, a pinch and a smidgen - to help with my baking.)

DECEMBER 30, 1926: Christmas carols were sung on Christmas Eve at the community Christmas tree in front of the high school. Clifford Topping acted as leader.

Bruce and Michelle Fries were welcomed into the United Church family on December 14.

Happy Birthday to Pearl Ververs on December 23 and to Hank on December 27.

Take time to enjoy the outstanding, colorful holiday decorations around our area. My vote goes for the VerPlank's on Witherden Road and the Hance's on Union Street.

Ed Bliek is home after a stay at Highland Hospital.

Pat Allen is a patient at the Strong Memorial Hospital.
