I hope everyone had a wonderful Thanksgiving. It seems to be a Holiday that is spent differently. Some people have the conventional special dinner with the turkey as guest of honor, stuffing and cranberry sauce. Others have a smaller version with a roasted chicken. We all have tons of food and feel so full we can't move (or figure out why we did all that eating.) Yet others have pasta to add to the menu. To some, it is a calm day of celebrating and being thankful, while to others, after dinner especially seems to be an open forum of debate. How ever you spent yours, I hope you enjoyed it. The people at Kraft had an idea of how to cope with all the extra turkey. If you didn't send home a plate of leftovers with your guests, you may be looking for ideas as to what to do with it all.

Leftover Turkey Soup
Makes: 6 servings, 1 cup each

1/2 cup chopped onion
1 medium carrot, sliced
1 stalk celery, sliced
1 Tbsp. vegetable oil
2 cans (14-1/2 oz. each) chicken broth
2 cups water
1 envelope GOOD SEASONS Italian Salad Dressing Mix
2 cups cubed cooked turkey
1/2 cup bite-sized pasta, uncooked

COOK onion, carrot and celery in hot oil in large saucepan 3 to 5 minutes or until tender-crisp, stirring occasionally.

STIR in chicken broth, water and dressing mix. Bring to boil.

ADD turkey and pasta; cover. Reduce heat to medium-low; simmer 10 to 12 minutes or until pasta is tender.
