Missing Sodus

I hope everyone had a great Easter (even though a lot of schools didn't give the kids the week off). I felt we didn't have enough sugar for the day, so I made a home made cheesecake and, I must admit, it was quite good. I never know how things will really turn out when I try to do them. It's one of those that tastes better the next day, I think because it has had longer to chill.

Lemony Cheesecake with Fresh Fruit ( but good without as well)

  • 1 1/4 C graham cracker crumbs
  • 1/4 C sugar
  • 1/4 C butter or margarine, melted
  • 2 (8 oz. ) pkgs. cream cheese, softened
  • 1 (14 oz.) can Eagle Brand sweetened condensed milk
  • 3 eggs
  • 1/4 C lemon juice from concentrate
  • 1 tsp. vanilla extract
  • 1 C fresh fruit ( optional)
  • Preheat over to 300 F. Combine graham cracker crumbs, sugar and butter, press firmly to the bottom of a pan ( I used a small cake pan ) sprayed with Pam.
  • In large bowl, mix or beat cream cheese until fluffy, gradually beat in the condensed milk until smooth. Add eggs, lemon juice and vanilla; mix well.
  • Pour into prepared pan, bake 50-55 minutes or until the center is set (center springs back when touched lightly). Cool and chill. Store leftovers in the refrigerator.

Shrimp and Crab Enchiladas

  • 6 (12 inch) flour tortillas
  • 1/4 pound Monterey Jack cheese, shredded
  • 1/2 (6 ounce) can crab meat, drained
  • 1/2 pound cooked medium shrimp, shelled and deveined
  • 1/2 (20 ounce) can green enchilada sauce
  • 1/2 (8 ounce) container sour cream
  • 1/2 bunch green onions, chopped
  • garlic powder
  • cilantro to taste
  • cumin to taste
  • season salt
  • Preheat oven to 350 degrees

Lay tortillas on a flat surface. In the middle of each tortilla place equal amounts of cheese, crab, and shrimp. Sprinkle with the garlic powder, cilantro, cumin, and season salt. Set aside some cheese to sprinkle on top of the tortillas. Roll the tortillas to form enchiladas.

Arrange side by side in a 9x13 inch baking pan. Pour green enchilada sauce over all of the enchiladas; the green sauce should cover the enchiladas completely. Sprinkle the remaining cheese over the enchiladas. Cover, and bake for 30 minutes in the preheated oven. Remove cover, and continue baking 15 minutes. Top enchiladas with sour cream and green onions to serve.

I was pleased to read in the D&C online that Jose Gabriel has opened up a second location in Canandaigua. One great thing that really impressed us when we visited in Sodus, was that the chef was happy to improvise a smaller plate to accommodate our somewhat-finicky kids' tastes.

When does fishing season begin? Isn't it the first of April? The weather will begin to get warmer. People are already out taking walks. Oscar has been out in his new spring wear. He has three new tee-shirts. One says Wag Team USA. He has a new hat as well and he looks sooooo cute. His ears fit through the holes and his face seems to disappear when he looks down. He is the best dressed dude in the neighborhood here.

Soon, the spring plants will be coming up and we can see how many of the bulbs survived the wildlife that came visiting during the winter. The lawns will be filled with the color and smells of spring. Enjoy it (we have definitely waited long enough for it to get here).
