Missing Sodus Well, the income taxes are hopefully all done and if you have a senior going off to college in a few months, your head is in a whirl of more money, figures and worrying. (But we won't let it get to us, not with Spring finally here.) It's so nice to see the leaves of the new flowers coming up. I remember the garden of hyacinths and other flowers that Ray and Holly had planted along their lawn by the side walk. I'd have the kids, when they were little, lean over and smell them, but the rule was look but no touching. Along Carlton, at the end of the street, there were loads of lilac bushes that smelled so nice when you walked past. I didn't have any room in my Sodus yard for a lilac bush or hyacinths but now is a different story (and I can pick these). Double-Dipped Potato-Chip Chicken with Quick Slaw
1. Preheat oven to 450 F. 2. Place crushed chips on large plate. With fork, beat egg in pie plate or shallow dish. Dip 1 chicken-breast half in egg, then transfer to crumbs on plate. Press crumbs onto chicken so they adhere. Transfer chicken to ungreased cookie sheet. 3. Repeat with remaining chicken. Dip chicken again in any remaining crumbs on plate so that chicken is completely coated. Return chicken to cookie sheet. Sprinkle both sides of chicken with 1/4 teaspoon pepper. Bake 15 minutes or just until chicken loses its pink color throughout. 4. Meanwhile, in large bowl, toss cabbage mix with carrot, onion, vinegar, oil, sugar, salt, and remaining 1/8 teaspoon pepper until well combined. In small bowl, stir mayonnaise and barbecue sauce until blended. 5. To serve, spoon barbecue mayonnaise into 4 small cups. Place chicken, slaw, and cups on 4 dinner plates. Congratulations to these and the many other families that have been blessed with new homes that were built out of love. Oscar has been barking since I came up to write the column. The other day, I had taken him into the hairdresser's all dressed up and cute, of course with a baseball cap and red tee shirt. She made such a thing of it. The other morning, just before the alarm went off, he graced me with lots of licking to get me up before the clock started making noise. Nothing like waking up to those two tiny black , round eyes and that little nose just inches from your face.
