Missing Sodus

Did you know? Cinco de Mayo is the fifth of May. Cinco de Mayo commemorates the victory of the Mexicans over the French army in 1862 and not the country's independence, as most people believe. The French won the larger war, but their defeat in this historic battle was a giant leap for Mexico. In Mexico, the day is noted with special dishes and lavish meals. Cinco de Mayo celebrations in the US are often much larger than those in Mexico, complete with parades, music, pinatas, and a huge feast. There are no specific foods associated with it, but indulging in classic Mexican fare is part of the celebration.

Chicken Enchiladas
Recipe by Rachael Ray

  • 8 soft corn tortillas

Filling:

  • 3 cups chicken broth
  • 4 pieces boneless skinless chicken breast, 6 to 8 ounces
  • 1 bay leaf, fresh or dried
  • 2 sprigs fresh oregano
  • 1 small onion, quartered
  • 2 tablespoons tomato paste
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • Salt

Sauce:

  • 2 cups tomato sauce
  • 2 teaspoons hot cayenne pepper sauce
  • 1/4 teaspoon ground cinnamon
  • 1 teaspoon chili powder
  • 2 1/2 cups Monterey Jack shredded cheese

Preheat the oven to 275 degrees F. Wrap corn tortillas in foil and warm in the oven. Bring broth to a boil in a saute pan. Set chicken into broth with bay and oregano and onion. Return to a boil, cover and reduce heat to simmer. Poach chicken in broth 10 minutes. Remove chicken breasts to a bowl and shred with 2 forks. Add 1/2 cup of cooking liquid and tomato paste, spices and salt and work through the chicken using the forks. Combine all sauce ingredients and heat through, keeping warm until needed. Remove tortillas from oven and switch broiler on high. Pile chicken mixture into warm corn tortillas and roll. Line casserole or baking dish with enchiladas, seam side down. Pour hot tomato sauce over the chicken enchiladas and top with cheese. Place enchiladas in hot oven 6 inches from broiler and broil 5 minutes to melt cheese and set enchiladas. Serve.

Friday, May 6, from 9 a.m., there will be a Barn Sale at Heritage Square Museum. This is a fundraising event for Ontario Historical Society where community members donate items (garage sale type). Sale will be Friday and Saturday from 9-4 and Sunday from 9-Noon. All proceeds benefit Heritage Square Museum.

My daughter will be a little tired since her class will just be coming home from their Washington Trip, but if there's shopping involved, I'm sure she won't mind. We'll bring Oscar along in one of his dapper outfits. He needs the exposure.

The Sodus Council of Churches is sponsoring the CROP walk for hunger on May 1. The six-mile walk will begin at the Church of Epiphany with registration at 1 p.m. The walk will begin at 1:30. For more information check out the story on the news index.

Karen Castle had written me a note yesterday and informed me that John will be attending MCC starting in September. He is studying video and TV production. His goal is to work for a movie company or Walt Disney doing special effects, lights, sounds etc. that sort of work. Good luck in accomplishing your goals, John. flowers For those of you who know Michael, he has been accepted to the University of Buffalo where he will be taking courses in the Medical field. We need someone around here who can straighten our medical problems out. (He could perhaps fix any emotional ones we have, as well. Just kidding... because we, of course, are all perfect.) Now the task begins of paying for it all.

The weather should get nice again and we can go back to our spring excitement and working in the yards or just enjoying the nice weather. Thanks to everyone who contributed to the column and remember, anytime you have something to share, send it along. Have a great week and enjoy each others company. It's a nice time to go for walks, the spring flowers look so pretty.
