Missing Sodus

We are another week closer to the big day and doesn't it seem to be very cold outside this winter? This is the time of year that kids are excited and parents are keeping track of the days going by because they are panicking. There must be something else that needs to be done. Try not to panic and enjoy the season.

I have told the people on my list that if they don't give me some ideas then they can't complain if they don't like their gift. As a wise woman always told me, 'You can do this good or you can do this bad, but you are going to do it.' The gifts, right or wrong, are up to the people themselves. (The wise woman is my Mother.)

Sodus Chamber of Commerce had a great turnout for their annual Christmas Event. Wayne County Business Council celebrated their Christmas event with a showing of the latest Harry Potter film at West Wayne Theatre. The Wayne County Business Council is putting together a calendar of programs for 2006.

Ginger Cookies
From Food Network Kitchens

Ginger Cookies These chewy cookies, packed with fresh spices and ginger preserves, are simple to prepare.

Yield: 30 cookies

2 1/4 cups all-purpose flour
1 1/2 teaspoons ground ginger
1 1/4 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground allspice
1/2 teaspoon ground mustard
1/2 teaspoon fine salt
5 cracks freshly ground black pepper
3/4 cup (1 1/2 sticks) unsalted butter, at room temperature
1/2 cup sugar, plus more for rolling the cookies
1/4 cup dark brown sugar
1 large egg yolk
1 teaspoon pure vanilla extract
1/2 cup unsulphured molasses
2 tablespoons ginger preserves (see cook's note)

Whisk the flour, ginger, baking soda, cinnamon, allspice, mustard, salt and black pepper together in a medium bowl.

Beat the butter and the sugars with a hand mixer or electric mixer on medium-high until light and fluffy, about 2 minutes. Scrape down the sides of the bowl. Add the egg yolk and vanilla and beat on medium speed until just incorporated, about 20 seconds. Add the molasses and ginger preserves and continue beating until the batter is an even light brown color, 30 seconds more.

Add the dry ingredients all at once, beating slowly to make a soft, smooth dough. Use a rubber spatula to make sure all ingredients are combined. Then beat again for 20 seconds. Cover the bowl with plastic and refrigerate the dough until firm, about 25 minutes.

Put about 1/2 cup sugar in a small bowl. With a cookie scoop or a small ice cream scoop, portion the dough into a slightly heaping tablespoon for each cookie. Roll the dough, by hand, into balls. Roll the tops of the balls in the sugar, and space them 2 inches apart on a nonstick or lightly oiled cookie sheet. Refrigerate until firm, about 25 minutes. (The chilling is what gives this cookie a beautiful, crackly crunch on top, and a soft, chewy center.)

Preheat oven to 375 degrees F.

Bake until the top is crackly, and the insides peeking out are dark and moist but not raw, about 15 to 20 minutes. Briefly cool the cookies on the baking sheets, then transfer to racks to cool completely.

Serve or store in a tightly sealed container for up to 3 weeks.

If you would like to make cookies with the kids and don't have the time to go home made all the way, there are some really good gingerbread cookies in the refrigerator section of the grocery store that are already cut out for you. Just bake and enjoy. There are also sugar cut out cookies so you can then bake, frost and decorate and still have fun doing it. You get about 24 cookies in the package.They are still considered home made. (You're at home and you made them.)

Baked Steak Burritos

A spicy beef and bean filling is all bundled up in a south-of-the-border burrito.

1/2 cup butter or margarine
1 package (1.25 oz) Old El Paso taco seasoning mix
1 1/2 lb. beef boneless sirloin tip steak, cut into thin bite-size strips
1 can (16 oz) Old El Paso refried beans
1 package (10.5 oz) Old El Paso flour tortillas for soft tacos & fajitas (12 tortillas)
2 cups shredded Cheddar cheese (8 oz)
3 medium green onions, thinly sliced (3 tablespoons)
1 can (10 oz) Old El Paso enchilada sauce
1 cup shredded Mexican cheese blend (4 oz)

1. Heat oven to 400F. In 10-inch skillet, melt butter over medium heat. Stir in taco seasoning mix. Add beef strips; cook 5 to 6 minutes, stirring occasionally, until desired doneness; drain.

2. Meanwhile, place refried beans in microwavable dish. Microwave uncovered on High 2 minutes, stirring once or twice.

3. Spread each tortilla with refried beans to within 1/4 inch of edge. Top each with beef, Cheddar cheese and onions. Roll up, folding in sides. In ungreased 13x9-inch (3-quart) glass baking dish, place burritos with seam sides down. Pour enchilada sauce over burritos. Sprinkle with Mexican cheese blend.

4. Bake uncovered 7 to 12 minutes or until burritos are thoroughly heated and cheese is melted.

At the Sodus Library: Pick up goodies for teachers, mailmen, paper deliverers, hairdressers, and anyone else you want to remember at Christmas. The Friends of the Sodus Free Library are sponsoring their 3rd annual Christmas Bread Sale, and this year they're adding cookies. Yummm! Everything will be wrapped and ready to give to someone special. Make sure to pick up a few things for family, too!

The sale continues today, Friday, Dec. 16, from 10 a.m. to 5 p.m. Any donations of baked goods will be gratefully accepted the mornings of the sale.

The Board, staff, and Friends of the Sodus Free Library thank everyone who had a part in making this year's Used Book Sale an outstanding success. We're especially grateful to Kass Vande and Shirley Patchett for the many hours they spent before, during and after the sale, organizing not only all of the 'product,' but also the workers. We continue to be amazed at what Shirley can do with a few pieces of cardboard and some duct tape!

Thanks, too, to all those who donated books and AV materials; the Butler Correctional Facility crew who carried all the books up from the basement; all those who helped set up, sell and take down: Mark Vande, Dan Patchett, Bonnie Bolling, Pauline Dodge, SallyAnn Danforth, Audrey Ferris, Bob and Dottie Hicks, Gib and Carol Sergeant, Chris Maroney, Lucinda Dodge, Jo-Ann Hill, Lukas Hampton, Scott Ginett, Laura Jonasse, Julie Schuldt, Jean Seymour, Jovan Parker, Jade Patchett, Kerri Gee, Hannah and Jane Jonasse, and Nathanael Derenbacher; our many customers; Market Place for donating the bags for our $1/bag days; local merchants and newspapers for helping us advertise; the Salvation Army for accepting our leftovers, and John Cook, Bette Bugni, Scott Ginett, and Kenny Savory for delivering those leftovers to the Newark store.

This year's record-breaking sale brought in $1,300.75, which will be used by the Friends group to purchase needed items not covered by the library's budget. We definitely have blessings to count - thanks to all of you!

Recent Library Visitors: Families from Sodus' Early Head Start and Even Start, and children from the Sodus Cooperative Nursery School all have recently visited. We hope to see you all back at the library soon!

Christmas Cantata: The combined choirs of the Sodus Point United Methodist Church and the United Third Methodist Church of Sodus presents a Christmas cantata entitled 'Sing and Shout for Joy!' created by Tom Fettke. There will be a performance at the Sodus Point United Methodist Church and on Sunday, December 18 at 10:45 a.m.

Another busy week. Christmas is a fun season that can be stressful because we have so much to do and want it to be more perfect than the ones we've had in the past. It doesn't have to be perfect. People will enjoy it anyway. Because we are always trying to make it perfect we get all stressed out and forget to enjoy it ourselves.

Enjoy your week with your families and enjoy the season. It belongs to everyone.
