Well, I washed the curtains the other day... not really sure about the Spring Cleaning thing. I don't want to live with the dust until March. Oscar can't wait to go out for walks again when the kids go off to school. I open the door, he smells the cold and snuggles into my neck. He's no dummy. It'll be so nice to open the windows and get some fresh air and not worry about freezing to death. Maybe this is cabin fever and its only the beginning of February?! (Darned Groundhog.) I whined about not getting any notes from Florida and I got a bunch. Thank you so much to Ralph Everdyke and to Beth for sending things along. Now don't make me whine the next time. Tom and a lot of the people of the area here have volunteered their time through the USO to help raise money for them with concession stands leading up to the Superbowl, and of course... he's volunteered for the event itself. Not sure if he'll be able to view any part of the game which has made him a little upset, but just the atmosphere he thinks will be a challenge or rather a venture itself. The kids & I are going to tape the game of course, make those buffalo wings, and a couple dips for the chips. Oh, if anyone is coming to the Orlando area... they've got a couple good deals example... Weight Watchers has a recipe for you: Buffalo Wings with Blue Cheese Dip
1 serving olive oil cooking spray (5 one-second sprays per serving), or enough to coat sheet 1. Preheat oven to 400 F. Coat a large baking sheet with cooking spray. 2. Place chicken wings in a zip-close plastic bag, add taco seasoning, seal bag and shake to coat. Transfer wings to prepared baking sheet and bake until cooked through, about 18 to 20 minutes. 3. Meanwhile, to prepare dip, whisk together sour cream, cheese and milk. 4. Serve wings with dip and celery on the side. Yields 3 wings, 3 tablespoons dip and 1 celery stalk per serving. Chef Tips: We renovated Buffalo Wings with Blue Cheese Dip by: Baking the wings instead of deep frying them in oil. Using fat-free sour cream and nonfat milk in the dip. Using Blue or Gorgonzola cheese packed with flavor, a little goes a long way. News From Ralph in Florida: It has been cold down here also. Has not frozen in our area, but did get down into the low 30s for several days. Had frost not too far north of us. Of course with the cold weather we have not been doing too much of anything either. Take a drive once in a while just to get out of the condo for a while. I have been playing golf once a week. Joined the same league that I was in last winter and am enjoying it very much. It is a 4 person scramble. On my team there are 2 women and another man besides myself. We are not the greatest golfers in the world, but we have a good time and enjoy each others company. Betty has had cataract surgery on both eyes since we got down here and everything turned out real well. Can see much better than she did before. The weather is supposed to be warming up and hopefully we get to doing some things. I was reading in the VFW magazine that there is a museum up at Camp Blanding in Starke, Florida. That is where I took basic training back in 1945 and we are planning on going up there some day and see what it is all about. Actually Camp Blanding is now a prison, but they have preserved one of the old barracks and also other things that would be interesting. Thanks Ralph I always enjoy hearing from you, nice to know someone is able to enjoy being outside when this time of year for us we do what we have to and get inside really quickly so as to not freeze.
For variety, make several dips to serve with chips, pretzels, or even homemade pita crisps. Serve raw veggies such as bell pepper strips, carrot sticks, and celery sticks. The crunchiness will help agitated football fans work out aggression. Try using drumsticks or thighs when making 'wings;' they're meatier, larger, and easier to handle. When it comes to desserts, think hand-held: bars and cookies are best. But if you want to make a cake, try a rich pound cake without frosting. That way, it can be pre-sliced and held like a cookie.
