Missing Sodus

Well, the Groundhog didn't do the job we wanted him to do but do we really believe him anyway? (We would if he told us what we wanted to hear.) If we get a few nice days here and there (enough for the snow to melt down and get the Christmas lights taken down), I guess we'll be ok.

News from the Sodus Chamber of Commerce:

The Chamber will again be conducting a raffle to benefit the Scholarship fund. Last year's raffle was a success and proved to be popular. This year, it is hoped to raise even more than last year's $1500 which enabled three scholarships to be awarded to Sodus graduates. The winners for the raffle prizes will be drawn at the annual Citizen of the Year Award Banquet to be held on April 8. Raffle tickets will be available from all Chamber members and are three for $10. Individuals or business may donate items for the raffle with all proceeds going to the scholarship fund. Items donated last year ranged from briefcases to dinner certificates to wine and everything in between. Items to be donated should be received no later than March 1 in order to advertise the donors and the items. News from the Super Bowl: Thanks to Tom and Beth Castle:

Tom was happy, he got to see the Super bowl, and meet people like, Magic Johnson (his comment... 'he's taller than I ever thought.'), Chris Rock, P Diddy. He rode the elevator with Sir Paul & Band & the Hawaiian Tropicana Girls... MC Hammer and others (I didn't recognize their names...) They made him wear a 'jacket w/tie & shirt.' He thought it would have been better if he just wore that from home... but they all matched. He was so happy to be there and the opportunity the USO offered w/the city of Jacksonville taking on the volunteers to help out. He said someone snapped a picture of him in the uniform and wanted me to send that later... he's so funny... he got to be in the 'star gazing' arena, did what he was asked, saw the Superbowl, and 'he got paid' $100 and a lunch voucher of $15. The only thing was the toilets were backed up until 1/2 time in his section...

Micki writes:

Ron & Micki Fagner live in the central part of Florida. Actually we live in Polk County. It is the largest county of Florida. We recently had visitors this last Friday. George P Smith and his wife June Smith from Newark, paid us a visit. They currently have been staying at June's sister Vera in Lakeland. We went out for dinner at Garfields' located at Eagle Ridge Mall in Lake Wales; Jim and Arlene Fagner also from Newark joined us. A wonderful evening was had by all. My sister Zelda & her husband Ken Johns will be coming down the 12th of February and spend a week with us. They live in Phelps NY.

Thanks to Beth and Micki. It's fun to read about what our friends in the South are doing.

A Weight Watchers Recipe for Valentines Day:

Chocolate-Raspberry Heart Cake

1 Tbsp all-purpose flour
2 cup unprepared devil's food cake, mix
1/2 cup water
1/4 cup fat-free egg substitute
1/3 cup jam, seedless raspberry
4 oz unsweetened baking chocolate square(s)
6 Tbsp jam, seedless raspberry
6 Tbsp fat-free creamer, such as fat-free half-and-half
1/2 cups raspberries

1. Preheat oven to 350F. Coat an 8-inch-round disposable aluminum pan with cooking spray and sprinkle with flour. Bend sides of pan to form a heart shape.

2. Mix together cake mix, water, egg substitute and 1/3 cup of jam with an electric mixer on low speed for 30 seconds; change speed to high and mix for 2 minutes more. Pour into prepared pan and bake until toothpick inserted in center comes out clean, about 30 minutes. Cool on a wire rack for 10 minutes. Invert onto a plate and remove from pan; place right side up on wire rack and allow to cool completely.

3. Meanwhile, melt chocolate in a double boiler over simmering water; allow to cool, then stir in remaining jam and half-and-half. Frost cake with chocolate mixture and outline perimeter of cake with raspberries. (Note: If chocolate mixture stiffens while frosting cake, microwave for 30 seconds to soften.)

If you feel you have some extra baggage from the holidays or just plain winter, Weight Watchers meetings are very informative. I think its $69 for eleven weeks and you can learn a lot. Many times we have habits we don't even realize we have. How about all the tasting we do while we are cooking? I was told we could consume almost a whole meal just sampling to make sure everything tastes just right. At the meetings, there are always the newest snack bars for sale and now they have cheddar twists and vanilla cinnamon twists at ll0 calories and just 2 points. Takes the worry out of, 'Is this all right to eat and how many points is this really?' They come prepackaged so there is no counting , you can just grab one and munch.

Here is an interesting recipe from Chef Patti (what a cute title):

Stovetop Chicken Pasta Chef Patti Battista: This is a chicken dish that is always requested, by my kids and clients alike. As a personal chef, I have had success with this dish time and time again, even for finicky eaters. Sometimes I substitute broccoli for the peas or whatever vegetable I know the kids will like. Serve this with a salad and a bread selection and you have a quick and easy meal! This meal can be frozen as well, so make a double batch for even less work next time!

Stovetop Chicken Pasta

1 lb. boneless chicken breasts cut into bite sized pieces
3 C chicken broth
1 1/4 C orzo pasta
1/2 tsp. salt
1 tsp. basil
1/2 tsp. oregano
2 pinches rosemary
1/4 tsp. pepper
1 C diced tomatoes
1/4 c sliced green onions
1 C frozen peas
1 C Asiago cheese, grated
Fresh parsley for garnish

Place chicken broth in medium saucepan and bring to a boil. Add chicken and pasta and cook for 6 minutes. Add herbs and cook until pasta is almost done. Add tomatoes and green onions and cook for an additional minute. Remove from heat and stir in frozen peas and 1/2 of the cheese. Mix well, season with additional salt and pepper to taste. Serve, adding additional cheese and parsley if desired.

This can also be made with shrimp in place of the chicken. Add the shrimp at the end as to not overcook it. I have made this using other vegetables as well or with a frozen vegetable mixture. The choices are endless. Also experiment with different cheeses such as parmesan, jack, fontina, etc. or even sun-dried tomatoes in place of the fresh ones. Just make sure you drain them and dice them before adding them to the mixture. Make two pans and freeze one for another day when cooking is out of the question. Then all you need to do is reheat this and your dinner is ready. Convenience is always a good thing.

Tonight, Williamson's Pack 511 will have its Blue & Gold Banquet at 6 p.m. at the Williamson United Methodist Church.

Lenten Breakfasts have started at the United Third Methodist Church in Sodus. People gather at the parish hall on Wednesdays at about 6:45 a.m. and eat at 7. Reservations are not needed, but a $3 donation is requested.

The Lenten Luncheons in Sodus are held at a different church each Wednesday. Call Betty Mayou at 483.9981 for information and reservations.

Don't forget: February 20 is the 3rd Annual CHILI BLUES FAMILY FEST & Chili Contest at O'Riley's in Sodus Point; 1 to 6 p.m.; music by Hollywood Al & the Mix; assorted Chili's (that you can vote on), fresh bread and family buffet; Winter Games (weather permitting); Raffles and stuff for kids. For tickets and information, call 315.483.6391.
