The Super Bowl is coming. Here are some quick and fun ideas for the eating part of the big day.

sunset Donna's Burritos

  • 3/4 pound ground beef
  • 2 cups Pace picante sauce
  • 1 can (8 ounces) mexi-corn
  • 1 package (8 ounces) cream cheese, softened
  • 10 flour tortillas (7-8')
  • 1 small red bell pepper, chopped
  • 1/2 cup sliced green onions, with tops
  • 1 cup shredded monterey jack cheese
  • 1 cup shredded cheddar cheese

1. Brown meat and drain. Return to skillet. Add 1 cup picante sauce; simmer uncovered 10 minutes or until most of the liquid has evaporated.

2. Stir in corn; remove from heat and set aside.

3. Spread cream cheese evenly over one side of each tortilla.

sunset 4. Combine meat mixture, red pepper, onions, 1/2 cup jack cheese, 1/2 cup cheddar; mix well. Spoon heaping 1/3 cup of meat mixture down the center of each tortilla and roll up.

5. Place seam side down in a greased 9x13 pan. Spoon remaining picante sauce evenly over burritos; sprinkle with remaining cheeses. Bake at 350 for 15 minutes or until cheese is melted and burritos are heated through.

6. Top with shredded lettuce, chopped tomato, sour cream and additional picante sauce. You could also serve chips and salsa or nachos, and you've got a great meal in minutes.

Spinach Dip in a Bread Bowl from CL-foodfan

  • 1 10-ounce package frozen chopped spinach, drained and thawed
  • 1 16-ounce carton sour cream
  • 1/2 cup mayonnaise
  • 1 package Knorr dry vegetable soup mix
  • 1 small can water chestnuts, drained and chopped
  • 1 small bunch green onions, chopped
  • 2 round loaves DARK bread such as black rye or pumpernickel

Mix all except bread and refrigerate overnight. To serve, use a sharp knife and cut a large deep circle out of the top of the bread to form a bowl. The bread you remove can be cut into rectangles for dipping. Spoon dip into bread bowl to serve. Cut remaining loaf into finger-sized rectangles for dipping

Also when the weather warms up a bit and you don't need to worry about the kids freezing outside when they are playing you can have them paint the snow. Fill up spray bottles with water and food coloring and they can go out and spray pictures or just make the snow pretty colors. Of course it's just for looks - we don't want permanently colored mittens. Once the art is done it's just to be looked at. What could be better then rainbow snow?

Getting up during the winter is so difficult, it seems we go to bed in the dark and we wake up in the dark. It's barely light when the kids catch the bus. What I have found since I get up before the roosters is atmosphere means a lot. A cd with soothing music maybe with ocean sounds or birds in the background and really nice smells make you feel more like getting started. Your shampoo and body wash make a big difference. Maybe while helping get the kids off to school a cup of green tea (it's good for you).

Happy Birthday to Jim Malone Sr.

sunset I spoke to Rhonda the other day and she had told me the roads were closed in Wayne County. I think the skiers should be happy for the season now. We've all had our share of shoveling and trying to get through winter. I still haven't heard much from Florida, although I did hear someone say it is in the 50s.

The Cassetti family will be heading to Arizona next month to visit Silvana's parents. They are looking forward to some sunshine and 80 degree temps.
