A strange week of really hot temperatures and gardening between the torrential rains. The high school kids, if not already finished with school, will be soon and the Seniors are close to their graduations. Congratulations to all who are graduating this year. (Seems like yesterday we were all lining up for the kiddie parade and getting them ready for their first day of school.) This time though, it is different, there is no trial run on the bus to meet the teacher. This time they are on their own. These might be a fun lunch for the kids to make for Dad on Father's Day. Bacon Quesadillas
4 flour tortillas, (6 inch) PREHEAT oven to 400F. Top half of each tortilla with 1/4 cup of the cheese and 1 Tbsp. each of the bacon bits and green onion. Fold tortillas in half; press lightly to secure. PLACE in single layer on baking sheet sprayed with cooking spray. BAKE 8 to 10 minutes or until edges are lightly browned. Or Campfire Hot Dogs
1/2 lb. ground beef 1. In 12-inch skillet, brown ground beef over medium-high heat; drain. 2. Stir in Pasta Sauce and beans. Bring to a boil over high heat. Reduce heat to low and simmer, stirring occasionally, 5 minutes. 3. To serve, arrange frankfurters in rolls and top with sauce mixture. Garnish, if desired, with cheddar cheese. TIP: For Chili Campfire Hot Dogs, simply stir 2 to 3 tsp. chili powder into sauce mixture. Cooking time is l0 minutes And for dessert: Summer Sundae Ice Cream Pie
1/2 gallon Breyers All Natural Ice Cream, slightly softened 1. Scoop Ice Cream into prepared crust. 2.Drizzle with melted Skippy Creamy Peanut Butter and sprinkles. 3. Cover and freeze until ready to serve. Let stand 5 minutes before. This weekend is Ontario Village Days Street, featuring crafts, food, games and live music. Saturday: Community Parade. Live music for the whole family followed by fireworks at Casey Park located at 6551 Knickerbocker Road.
Be sure to remember Father's Day and good luck to all of the graduates of 2005. (Seems like yesterday my son kept saying, 'I'm going to be a graduate of 2005,' and it seemed so far away. They have been working toward being grown ups a long time and now they can take the strong foundation their parents gave them and begin a whole new adventure in their lives. They'll still need us and we will be a big part of their lives, but now a lot of things they can and have to do for themselves. Have a great week and enjoy each other's company. Copyright
