Missing Sodus We did go to the Spring Fling and met a lot of nice people. I found gift shops I didn't know existed. Although maybe when we were living out in Sodus, these places didn't exist yet. The Fling was fun, but I think to fill up your sheet with the stamps you needed to win the top three gift baskets you would have to start very early in the morning. All the shops were not just in Sodus and Sodus Point some were in Marion, Wolcott and Ontario as well. While we were there, we saw some familiar faces. Mrs. Johnson (Ian's mom) was going on the Crop Walk according to the sticker she was wearing. And while we were in Sodus Point, I had to stop really quickly to say hi to Ruth Lennox. Seems like yesterday our kids were playing in the pool and we were sitting on the deck enjoying the sunshine. It was nice to see them both. Next Saturday, May 14, the Sodus Bay Maritime Captains Association & the Oswego Maritime Alliance will sponsor a day sailing trip from Oswego to Sodus Bay aboard the Denis Sullivan, a l38-foot Tall Ship. There will be an opportunity for 50 people at the cost of $60 per person to go on the day voyage. Boarding will be at the West lst St. Pier in Oswego and dock at its destination in Sodus Point at the Katlyn Marine . Transportation is supplied by the passengers themselves when they are on land. Gently slide chicken into the poaching liquid. Return liquid to a boil, cover and reduce heat to simmer. Allow to poach for about ten minutes. Shred Chicken. Remove chicken breasts and place in bowl. Add cooking liquid, tomato paste, and seasonings to the bowl and use two forks to shred chicken. Roll, Roll, Roll. Make a pile of the chicken mixture inside the bottom third of a warm corn tortilla and carefully roll. Prepare Casserole. Line casserole or baking dish with enchiladas, seam side down. Pour hot tomato sauce over the chicken enchiladas and top with cheese. Place enchiladas in hot oven 6 inches from broiler and broil for five minutes to melt cheese and set enchiladas. Plate with Mexican rice and refried beans. Have you ever watched Rachael on her show? She is so much fun to watch. She enjoys cooking and her recipes are always easy and tasty. Don't forget an important day is coming up this Sunday... Mother's Day. There are times I am inclined to think mothers should get a small gift on the child's birthday, as well. You don't have to go super fancy for Mother's Day. Pamper her and let her know she is appreciated are two of the big ones. The kids can make her a card for the big day and, to most moms, that is more important then any store bought one. Anyone can buy a card. It takes love to make one from the heart. Although, breakfast in bed is nice, and taking her out to lunch or dinner so she doesn't have to do dishes is good. But if you don't go out, be sure to help with clean up. Mark your calendars: May 22, Sunday, 'Sampling Sodus' Trade Show, sponsored by the Sodus Chamber of Commerce, at the Wallington Fire Hall. Local Businesses should bring samples of their business, whether it is brochures, samples of pizza, soup, sweatshirts, cheese, etc. The event will be advertised throughout Wayne County. Each vendor will be asked to donate an item to be raffled as door prizes for the public. Tables and chairs will be furnished; the hall will hold approximately 30 vendors. Spaces will be offered to Chamber members first and will be free. Non-chamber members will be charged $20. Get outside and enjoy the warmer weather and the sunshine with Mom. How about a walk along the pier at Sodus Point? Browse through one of the cute gift shops the area has? Enjoy each other's company.
