Speaking of fun events, keep looking for the Digital Edition of the Courier's Summer Living. (Should be online next week.) I have had the chance to take a sneak peek at the cover and that is one good looking dude on the front of that page. A little guy you just know will be having fun all summer without really wanting to stop for a nap. If you didn't have the chance to send recipes in for the Summer Edition you can still send along recipes to me and I will be happy to share them

Also what do you like to do for fun during the summer? Do you have lots of summer-time picnics? Like to sit as a family and toast marshmallows or just sit to enjoy the warm sun shining on your face? It's fun to hear about things others like to do. We used to like to go to Sodus Point to feed the ducks... very peaceful sitting on the bench and feeding them (until the fights with the seagulls began).

A fun recipe for the nice weather:

Chocolate-Berry Parfaits

1 1/2 cups cold milk
1 pkg. (4-serving size) JELL-O Chocolate Flavor Instant Pudding & Pie Filling
32 NILLA Wafers, divided
2 cups mixed berries (blueberries, raspberries and sliced strawberries

POUR milk into large bowl. Add dry pudding mix; beat with wire whisk 2 min. or until well blended. Gently stir in 1/2 cup of the whipped topping.

SPOON half of the berries evenly into 8 parfait glasses. Reserve 8 of the wafers for later use. Stand 3 of the remaining wafers around inside edge of each glass. Spoon half of the pudding mixture evenly over berries in glasses. Repeat layers of berries and pudding mixture.

REFRIGERATE at least 1 hour or until ready to serve. Top with the remaining whipped topping and reserved wafers just before serving. Store leftover parfaits in refrigerator. When I first saw the recipe I thought there were M&Ms in it , marshmallows would be good too or maybe bananas add your favorites and make it fun for you.

If you have recipes you'd like to share, something fun and easy please send them along to me. Thanks to everyone who contributed to the column and shared their thoughts and ideas. Enjoy your week and each other.
