It was a beautiful weekend... one last chance to get things done in the yard before 'winter.' It's hard to think about having to put on the big coats again and, if you have been putting off taking them into the dry cleaner, you might want to do that and soon. Probably the best time to take them would have been in the spring when we were done with them. I am not one of those people, however.

News From Ralph Everdyke in Florida:

Seeing the weather was so nice today and the price of gas down here has gotten down to $2.14 per gallon. Betty and I decided to take a ride. We went to Clearwater Beach and drove down thru there and then ended up in Fort DeSoto Park which is way down on the south end of St. Petersburg. The fort was originally built to protect the Tampa area during the Spanish American war. There are several cannons still there and of course all the other things connected with their operation. Fortunately they never had to be used and are still there in the park. It was expensive to get in the park though. They charged us 35 cents to get in. In addition to the display of the Fort there are also camping areas, fishing piers, bicycle paths and canoes you can rent to take out in the gulf. Very nice.

Sodus Chamber is getting ready for the holidays! The Sodus Chamber invites everyone to join them for a Community Christmas party on December 8 at the Wallington Fire Hall starting at 6 with cash bar and dinner at 7. $20 ADVANCED SALE ONLY tickets for Carved Prime Rib, Chicken Marsala, and Baked Pasta buffet. Seating is limited to only 125. Local businesses will be donating items for door prizes to help spread Christmas cheer. So, get together with a few of your friends and join your neighbors for a perfect start to the holiday season. Don't forget to shop locally during the holidays. Not only will you save time and gas, but you will support the businesses in Sodus and keep the sales tax revenues where they belong.

Apple Braised Chicken

2 tsp vegetable oil
1 pound uncooked boneless, skinless chicken breast, four 4-oz pieces
2 Tbsp all-purpose flour
1 large onion(s), sliced
2 medium apple(s), firm, cored and sliced
1 cup apple cider
1 cup fat-free chicken broth
1/2 tsp table salt
1/2 tsp ground ginger 2 tsp cornstarch

1. In a large, heavy-bottomed skillet, warm oil over high heat. Toss chicken with flour in a medium bowl, patting off excess. Place chicken in skillet and brown well on both sides. Remove chicken from pan and set aside.

2. Reduce stove temperature to low and add onion to skillet. Saute, stirring often, until onion is tender and lightly browned.

3. Stir in apples, cider, chicken broth, salt, ginger and chicken. Bring to a simmer, cover and cook for 30 minutes. Use a slotted spoon to transfer chicken, onions and apples to a serving dish.

4. In a small bowl, whisk together cornstarch and 2 to 3 tablespoons of pan juices. Combine cornstarch mixture with remaining pan juices, whisking constantly. Simmer for one minute. Pour sauce over chicken and serve. Yields 1 chicken breast and about 3/4 cup of apple-onion mixture per serving.

5. Flavor Booster: Pears and chicken are an appealing combination. Substitute 2 ripe Bartlett or Comice pears, peeled, cored and diced for the apples, 1 cup sparkling pear cider for the apple cider and 1/4 teaspoon ground nutmeg for the ginger. (This is a Weight Watchers recipe.)

A pie idea for Thanksgiving:

Double Chocolate French Silk Pie

When I first made this recipe I decided to make two pies, but when I made my list I doubled the chocolate! In continuation, I doubled the chocolate for each pie as I made it. It was delicious and very rich and became a favorite request at church dinners.

Serving: 8

3/4 cup butter (1 1/2 sticks)
3 oz Unsweetened baking chocolate (melted)
3/4 cup sugar
1 teaspoon Vanilla extract
1 Baked 8' pie shell
1 can Whipped Cream (or your favorite whipped cream)
2 Eggs

Melt chocolate and set aside to cool. Place butter in mixing bowl; beat with electric mixer at medium speed until creamed. Add sugar gradually, beating thoroughly. Blend in cooled chocolate; add vanilla. Add eggs, one at a time, beating for 5 minutes after each addition; pour into pie shell. Chill about 2 hours or until set. Top each slice with whipped cream before serving.

Thanksgiving is a time of getting together with family and friends, but sometimes it would be nice to have an intimate meal at your own house. The kids could sit on the couch and watch the parade (while driving you a bit nutty because they want you to see every float). Your family can sit down to the table, maybe use the special silverware that is packed away for special occasions. In the afternoon, when everything is all put away, and the kitchen looks normal again, everyone could watch a rented movie, make some Christmas cookies and then, before bed, maybe share some books from the library. It's a nice day to make some memories everyone will look back on and happily remember.
