Daffodil Salad

3 oz. package lemon gelatin
1.5 cups pineapple juice
3-oz. package lime gelatin
1 egg, slightly beaten
4 bananas, sliced
2 tablespoons all-purpose flour
16-oz. can pineapple tidbits (drain and reserve juice)
2 cups miniature marshmallows
1 cup finely shredded coconut, optional

In a large bowl, combine lemon and lime gelatin; follow directions on package to make. Once gelatin has thickened, stir in bananas and pineapple. Pour into a 9-by-13-inch pan and chill until set. In a small non-stick saucepan, combine pineapple juice and egg; whisk in flour. Heat over medium temperature, stirring constantly, until thickened. Add marshmallows and stir until melted and mixture is smooth and creamy. Remove from heat and allow to cool. Spoon marshmallow topping over gelatin; sprinkle with coconut. Chill until serving. Makes 16 servings.
