Missing Sodus

 It's Easter weekend and spring now seems to be sticking around. The kids have Easter break. (Or is it called spring break?) Hopefully, everyone has seen their first robin. The flowers are coming up the weather is warmer. All is good.

Just something fun to add to your calendars, I'll remind you when the time is closer:

The Sodus Chamber has exciting news:

$1700 was raised for Scholarships - this is the most we've ever had! Many thanks to all who donated, and of course, to all who bought tickets! We had 121 people attend the Citizen of the Year Banquet - another big number for our recent history! Many thanks to Griff for doing a fine job as MC, and to Julie Schuldt and Linda Patchen for taking care of the raffle drawing. Sodus Bay Heights Restaurant came through for us again and many thanks to them. And just to keep the good news going - we have 20 vendors signed up for the Olde Tyme Country Faire so far; last year at this time we only had 13 signed up (out of 45 total) so, it looks like we're on our way to a big success. If anyone is going to antique shows, craft shows, etc., please take flyers with you. And, Sampling Sodus has 12 out of the 17 spots available filled so far. If you want to be part of this, you'd better hurry and get your spot. Remember, it's at the Fly In Breakfast, so there will be a big crowd. To those already signed up, there are parking passes to park off Route 104.

Books-Sandwiched-In at Sodus Free Library: April's Books-Sandwiched-In will feature Christine Sanguedolce discussing 'Planting Perennials in Containers.' The luncheon will start at noon on Monday, April 17. Registration is limited, so call 483.9292 or stop by the Library at 17 Maple Avenue to reserve your place for this timely presentation (and a delicious lunch!). April 20: Meet the Author Program at Sodus Free Library. Local author Susan Peterson Gateley will present a program and readings on Lake Ontario shipwrecks and rescues at 7 p.m. on Thursday, April 20. The program is based on Peterson Gateley's most recent book, 'Ariadne's Death: Tales of Heroism and Tragedy on Lake Ontario.' Registration is not required; call 483.9292 or stop by the Library.

Sodus High School Council proudly presents The Second Annual Community Dance on Saturday, April 29 from 7:30-9:30. This Semi-Formal dance is for those who love to dance and have fun; ages 35 and older. Free child care is available for children 5-ll. RSVP to Sodus High School 483.5280 by Wednesday, April 26 (for both attendance and childcare).

Fun for Easter: Made with marshmallows and chow mein noodles, these snacks are fun for kids at Easter time.

2 cups miniature marshmallows
1/4 cup butter or margarine
1 (6-ounce) package (4 cups) chow mein noodles
Jelly beans

PREPARATION: In 2-quart saucepan combine marshmallows and butter; cook over low heat, stirring occasionally, until melted (6 to 8 minutes). Stir in noodles until very well coated. With buttered fingers, press mixture on bottom and up sides of each cup of buttered 12-cup muffin pan.

Refrigerate at least 2 hours or until firm.
Remove from cups; fill with jelly beans.

Roast Breast of Chicken with Mushroom Duxelles and Herb Butter

4 chicken breast halves, bone-in and skin on
1 1/2 lbs assorted mushrooms, brushed of dirt
1 lemon, zest and juice
2 TBLS butter
2 1/2 tsp salt, divided
2 1/2 tsp black pepper, divided
4 slices bacon, diced
1 yellow onion, diced
2 cloves garlic
1 stick butter, room temperature
1 cup packed mixed fresh herbs

In food processor, pulse mushrooms in 3 batches. (Don't process too finely; mixture should resemble fine gravel.) Transfer mushrooms to bowl; add half of lemon juice. Warm 2 tablespoons butter in non-stick saute pan over low heat; add mushrooms and cook, stirring frequently, until all liquid has completely absorbed, about 35 minutes. Remove from heat and cool. Season with 1 teaspoon salt and 1 teaspoon black pepper.

In another saute pan, place bacon and cook over medium heat until golden and beginning to crisp, about 5 6 minutes. Remove bacon to paper towel to drain. Add onion to same pan and saute over medium heat for 5 minutes until onions are soft, stirring often. Remove from heat and cool.

Preheat oven to 350 degrees. Place chicken on flat surface and season both sides of each piece, using one teaspoon salt and one teaspoon black pepper. Allow to sit for 10 minutes.

In bowl of food processor, place garlic, one stick of butter, herbs, lemon zest and remaining lemon juice; process until smooth. Transfer to large bowl. Combine with mushrooms, bacon and onion; blend well. Season with remaining half teaspoon salt and half teaspoon black pepper.

Gently run finger under skin of chicken. Divide mushroom-herb mixture into four equal portions; stuff under skin of each piece of chicken. Place in roasting pan and roast in oven 40 50 minutes, until skin is deep golden brown.

Serves 4
