Missing Sodus

A much cooler week which was quite welcome. This week you could spend time outside and it was for more then ten minutes. No worrying about the kids and the elderly, as well as those who can't breath when the ozone levels get out of whack. The flowers in the gardens look much happier now, as do the gardeners who don't have to work so hard to keep water on them.

We are always looking for new recipes that are healthy. Everyone will enjoy and though no one really needs to know it that are as fast as almost humanly possible. Here's another idea:

Sizzling Beef & Vegetable Kabobs
Kraft Kitchens
Makes: 6 servings, 2 kabobs each

1 lb. boneless beef sirloin steak, cut into 1-inch cubes
1/2 cup Kraft Greek Vinaigrette Dressing, divided
12 cherry tomatoes
6 medium button mushrooms, cut in half
8 asparagus spears, blanched, cut into 2-inch lengths
12 wooden skewers, soaked in water

PLACE steak in large resealable plastic bag. Add 1/4 cup of the dressing; seal bag. Refrigerate 30 min. to marinate. Remove steak from bag; discard marinade.

PREHEAT grill to medium heat. Thread steak onto skewers alternately with the tomatoes, mushrooms and asparagus.

GRILL kabobs 15 min. or until steak is cooked through and vegetables are crisp-tender, turning and brushing occasionally with the remaining 1/4 cup dressing.

Part of the time was spent in the refrigerator so it wasn't so bad.

A note to make cooking easier:

  • Cut the meat and veggies into the same size so they cook evenly.
  • Soak wooden skewers in water for 30 min. to an hour to prevent them from burning on the grill.
  • Use the double-skewer technique two skewers side-by-side for each kabob. It makes for easier flipping!
  • Leave space between each piece on the skewer so they cook thoroughly and brown evenly.
  • Rotate kabobs to ensure even cooking on all sides.

Sunday, August 13 Summer Concerts at Sodus Point Lighthouse Museum - 2 p.m. featuring Chorus of the Genesee. Bring a chair or blanket. Refreshments available. (Is Al Dobbin still stinging in the Chorus of the Genesee? If you have the chance to go look for him.

In moving again, I remember what I dislike most about it. EVERYTHING!!!!!! I think I'm up for any challenge, but then you give me a task like moving and I (if given the chance) will throw in the towel and my hands into the air.

Don't forget to pick up some more good books and movies at the libraries. I find that a good book is like a good friend. Enjoy your week and have fun with each other.
