Missing Sodus

We had a nice weekend, and saw friends, the Hoopers, on Sunday. Susie's baby, Ariel, was baptized at the Church of the Epiphany and then we went out to Eileen's brother's place on LeRoy Island. The Hoopers came up from Florida to have the Baptism in Sodus in the Church where Susie was baptized, as well as attend a wedding the next weekend. It was all nice and we appreciate them including us in their special day. Of course, with my sense of direction we are lucky we ended up back where we were supposed to. I have my navigator who, even though I tell her it can't be the right way, always gets me back.

No Bake Cookies

1/4 cup fat-free skim milk
2 Tbsp unsweetened cocoa, powder
2 Tbsp sugar
1/4 cup chunky peanut butter
1 cup uncooked old fashioned oats
2 tsp canola oil

Mix milk, cocoa powder and sugar in a small saucepan over low heat.

Bring to boil, then remove from heat. Add peanut butter and stir into mix until melted.

Stir in oatmeal and oil.

Drop 16 spoonfuls onto a baking sheet lined with wax paper. Freeze for at least four hours; they are better the day after you make them.

Tropical Chicken with Grilled Sweet Potatoes

6 Tbsp fresh lime juice
3 Tbsp ginger root, fresh, minced
6 Tbsp apricot preserves
6 Tbsp soy sauce
1 pound uncooked boneless, skinless chicken breast, four 4-oz pieces
2 large sweet potatoes, scrubbed and sliced into 1/4-inch-thick rounds

1. Preheat grill.

2. In a large bowl, whisk together lime juice, ginger, preserves and soy sauce. Set aside 1/2 of the marinade. Add chicken to remaining marinade, cover and refrigerate for at least 1 hour and up to 24 hours, turning chicken occasionally.

3. Grill sweet potato slices until tender, about 8 minutes, brushing with reserved marinade as they cook. At the same time, grill chicken until firm and cooked through, about 4 to 5 minutes per side. Yields 1 chicken breast and about 1 cup of sweet potatoes per serving.

at the bay

James Postier and family went on a couple of mini-vacations and I'm sure had a great time. Sometimes those are more fun than the big ones. Of course, all vacations are always welcome and appreciated.

Speaking of mini-vacations - although the Hoopers spent most of their trip up here quite busy, they will be heading back home to Florida on Monday. Mom Betty will stay until the beginning of October to spend more time with the kids who still live up here. When the fall nip gets in the air, I'm sure she'll be glad to get back home to Florida.

Now is the time to get the school supplies if you haven't gotten them already. Many of the stores have great areas and things are right at your fingertips. Get them soon so you can all enjoy that last week of vacation without the stress. Many of the college kids are going back this weekend and, if not this weekend, soon. We will be moving things back to college this weekend and I've asked the Realtor to give me a little rest from the people in and out of the house. Packing is no neat event, and I like to sprawl things all over so I can see what I'm doing.

Have a great week and be sure to enjoy each other and this beautiful weather. Absorb as much warmth as you can and make a lot of great memories.
