Missing Sodus

Finally, everyone is back to their routines. Gone are the worries of the weather and if you can get the kids to snowy Buffalo before the next storm hits. All is good with the new year, and of course there are more fun things to plan for the nice , sunny weather in months to come.

Matt's Healthy Pizza

  • 3 cups eggbeaters
  • 4 T pizza sauce
  • 1 cup shredded mozarella cheese
  • pepperoni slices (or other toppings of your choosing)

Instructions:

Preheat oven to 400 degrees. Pour eggbeaters into skillet and cook in stove top over low-medium heat until firm (approximately 12 minutes). Do not stir or scramble the egg beaters. Let them sit as to create a 'pizza pie' Remove from stove. Spoon on sauce. Sprinkle on cheese evenly. Top with pepperoni slices. Bake in oven for 10 to 15 minutes or until cheese is melted.

Sunday, February 19, from 1 to 6 is the 4th Annual Chili Blues Family Fest sponsored by the Great Sodus Bay Association at Papa Joe's Restaurant in Sodus Point. Hurry...only the first 12 entries will be accepted! Prizes for 1st, 2nd, and 3d place. There will be winter games, raffles, and lots of activities for the kids. Shirley Patchett has been painting rocks for the last few years, and they just keep getting more and more detailed. On the side of one of the houses is a little patio-type table with a couple of chairs. On the table is a glass of lemonade, and there's actually a straw in the glass! They are just unbelievable up close. In the display, we have now of some of her latest houses, she put mirrors along the back, so people can see all of the neat details she's painted on every side. There are red birds in birdbaths, ivy climbing up the bricks, and she has a restaurant, Dan's hardware (her husband's name)... really a whole village. She can just look at a rock and see how the house should look - it's amazing. After lots of begging, she has agreed to do a series of 3 classes for people at the library. She did something similar for some of the ladies at Curves last year. She has a list of supplies they'll need to bring, and assures me that anyone can do this. We're expecting to have a lot of fun, starting at 10:30 a.m. on Monday, January 23. - Carol Garland

Ideas for your rice cakes:

  • 1/4 cup (2 oz.) fat-free cream cheese, softened
  • 1 tablespoon fat-free caramel topping
  • 2 Quaker Chocolate Crunch Rice Cakes
  • 2 teaspoons chopped toasted pecans
  • 2 teaspoons fat-free chocolate syrup
  • Stir together cream cheese and caramel topping in small bowl until smooth.
  • Spread mixture over Chocolate Crunch Rice Cakes, dividing evenly.
  • Sprinkle with pecans; drizzle with chocolate syrup. Servings: 2

Or:

  • 1 can (16 oz.) fat-free refried beans
  • 1 cup salsa
  • 2 medium plum tomatoes, diced
  • 1 can (4 oz.) chopped green chilies, drained
  • 1/2 cup chopped green peppers
  • 1/4 cup chopped onions
  • 1 cup shredded low-fat cheddar cheese
  • 12 Quaker Salt Free or Lightly Salted Rice Cakes
  • Heat beans and spread over Quaker Salt Free or Lightly Salted Rice Cakes. #
  • Layer with salsa, tomatoes, chilies, green pepper, onion and cheese. #
  • Garnish with low-fat sour cream, if desired Servings: 12

Seems like yesterday Eileen Hooper's January birthday was spent outside next to a bonfire. This year reminded me of it because of January being so mild. Happy birthday, Eileen.

It's nice the weather is warmer and we don't have to deal with all the snow. The sun peeks out once in a while and I guess we'd better enjoy it. The warmer temperatures do make life easier and, on rainy days, if you get the chance, drop by one of the libraries and pick up some books for you and some for the kids to read. It's also a good time to plan what you'd like to plant in the garden.
