Ralph Chicken Enchiladas This dish is microwaved, so it's done in a hurry.
COOK chicken in nonstick skillet until browned and done, stirring often. Add chicken soup and 1/2 cup of salsa. Heat through. SPOON about 1/3 cup chicken mixture down the center of each tortilla. Roll up tortilla around filing and place seam-side down in a 2-quart microwave-safe baking dish. MIX cheese soup and remaining salsa and pour over enchiladas. COVER and microwave on HIGH 5 min. or until hot. This serves 4, so if you need more just double this recipe. Diane and her husband Tom moved into their new home. Last Saturday was their first official day. You can make your own Oreo cookies at home with this recipe.
Cookies: Blend cake mix, eggs, water, oil and cocoa. Shape into a ball; let stand 20 minutes. Roll into 1/2- inch balls, place on greased cookie sheets. Flatten each with smooth bottom on a drinking glass. (Grease glass once, dip into the Nestle Quik each time.) Bake in 400 degrees oven for 8 minutes. Remove cookies at once, immediately flatten with the back of a spatula. Let cool 20 minutes. Makes 100 cookies. Filling: Place gelatin in a heatproof cup. Add cold water; stir well. Put it in a pan of hot water until mixture clears and gelatin is softened. Beat Crisco until fluffy. Add sugar gradually and beat about 10 minutes. Mix in vanilla. Beat in cooled gelatin mixture. (The gelatin keeps the filling in place inside the cookies.) Spread about 1 tablespoon filling between 2 cookies. Chill until set. Makes about 50 cookies. Offerings will include homemade pies, candies, cakes, cookies, brownies, etc. - everything and anything chocolate. The sale will be held Thursday, February 9, from noon until 8 p.m., and on Friday, February 10, from 10 a.m. to 5 p.m. Contributions of chocolate products will be gratefully accepted between 9 a.m. and 10 a.m. Thursday. The annual Sodus Free Library Association meeting and election of Trustees will be held on February 2 at 7 p.m. The Library's 2006 financial budget will also be submitted for approval at this meeting. Three candidates (Robert Bayless, Jr., Carol Sergeant, and John Cook) are running for two Board openings; each position is for a five-year term. To vote in this election, you must be 16 years of age, a resident within the Sodus Central School District, and an OWWL card holder. If unable to attend the meeting, you may vote by absentee ballot, available now at the circulation desk. Circus comes to Ontario: On Saturday, January 28, the Cole All-Star Circus will appear in the Wayne High School Gym as a benefit for the Ontario-Walworth Rotary Club. Since many of us can't go on a cruise to take away the winter doldrums, try to come up with some fun creative things you and your families can do to make cabin fever and the winter blues go away. Put some artificial spring flowers in a vase, have a travel movie night. I'm sure you can find some of Disney and Mexico. If you are going to watch one about Mexico, maybe fix some Mexican food for dinner. If you are into tropical, beachy places (as I am), look for some placemats with palm trees or pinapples for the table. Pick up a bag of seashells and put them around. Have a Hawaiian night and get some leis or have the kids make some. Macadamia nuts are good. Maybe watch Lilo and Stitch movies. Look through some gardening books and think about some plants you'd like to read up on for your garden in the spring. We only really have a month and some to go before the real spring will be back.
