Wednesday (and the rest of the week) felt soooooo nice, didn't they? Spring has finally sprung. A good time to start raking the old leaves out of the gardens, wash and stain the deck so the furniture can be put out. I think it's not just by seeing a robin or the geese come back, you can tell by looking at the people in the neighborhood. They are happy hibernation is over. You see people working in the lawn, washing the car, sitting enjoying the warmth of the sun, and the sound of children playing. Don't forget that the time changes this weekend. Spring ahead one hour. I always set all the clocks early because I'm afraid I'll forget. It just doesn't make the next morning go well if you are late for Church or a family function. One time we were meeting friends for breakfast in the fall and we sat there wondering why they were an hour late. NY Sea Grant April 5 Workshop to Address Uncertainties and Risks of Managing a Business on New York's Coastlines To be successful, coastal businesses must deal with the increasing uncertainties related to the waterfront economy and to fisheries. On April 5, New York Sea Grant will offer a workshop to help New York's coastal businesses adapt their management decision-making as the water-based natural resources and economic climate change and anticipate new markets and business opportunities. The Managing Coastal Businesses in Times of Resource and Economic Uncertainties and Risks Workshop will be offered in Auburn at the Holiday Inn on Wednesday, April 5 from 10 am to 3 pm. 'Business owners, particularly those with businesses directly tied to natural resources that by their very nature have inherent uncertainties, make daily decisions that involve risk. This new workshop will help answer the question: 'How can I accommodate unknowns into making better business management decisions to not only stay in business but take advantage of new opportunities,' says David White, Marine Facilities Specialist with New York Sea Grant's Great Lakes Program, Oswego. Workshop presenters include experts in natural resource economics, marketing, tourism and small business management from the State University of New York College of Environmental Science and Forestry, Cornell Cooperative Extension and the New York and Ohio Sea Grant programs. Topics will address understanding risk, reaching new and diverse customers, current trends in coastal resource users, and making business decisions in times of uncertainty. A Business Success Panel will feature representatives of the charter boat, diving, lodging, marina, boat sales and tourism promotion industries. From the Sodus Library: Children in grades 3 through 6 are encouraged to nominate their favorite book for a 3 Apples Book Award. Developed to encourage the joy of reading for pleasure and to give the children of our State the opportunity to participate in honoring their favorites, this New York State Children's Choice Award is based solely on their nominations and votes. Children can pick up nomination forms from Mrs. Olson, Sodus Primary Librarian, or Mrs. VanKouwenberg, Sodus Intermediate Librarian. The completed forms (one nomination per child) can be dropped off at either of the school libraries or at the Sodus Free Library.

Beef and Noodle Bake
1 pound ground beef 1. Preheat oven to 375 degrees F (190 degrees C). 2. Brown the ground beef in a large skillet over medium high heat; set aside. Cook macaroni according to package directions, drain and set aside. 3. In a 9x13 inch baking dish, layer the macaroni, ground beef, tomato sauce and cheese, repeating two times. 4. Bake at 375 degrees F (190 degrees C) for 30 minutes, or until top layer of cheese is bubbly. PHILADELPHIA New York Style Strawberry Swirl Cheesecake Makes 16 servings 1 cup HONEY MAID Graham Cracker Crumbs 3 Tbsp. sugar 3 Tbsp. butter or margarine , melted 4 pkg. (8 oz. each) PHILADELPHIA Cream Cheese , softened 1 cup sugar 1 Tbsp. vanilla 1 cup BREAKSTONE'S or KNUDSEN Sour Cream 4 eggs 2/3 cup seedless strawberry jam , divided PREHEAT oven to 325F. Line 13x9-inch baking pan with foil, with ends of foil extending over sides of pan. Mix cracker crumbs, 3 Tbsp. sugar and butter; press firmly onto bottom of prepared pan. Bake 10 min. BEAT cream cheese, 1 cup sugar and vanilla in large bowl with electric mixer on medium speed until well blended. Add sour cream; mix well. Add eggs, 1 at a time, mixing on low speed after each addition just until blended. Pour over crust. Using 1/3 cup jam, gently drop small spoonfuls of jam over batter; cut through batter several times with knife for marble effect. BAKE 45 minutes or until center is almost set. Cool completely. Refrigerate at least 4 hours or overnight. To camouflage little cracks that may occur after baking, fill cracks with the remaining jam just before serving. Lift from pan, using foil handles. Cut into 16 pieces to serve. Store leftover cheesecake in refrigerator. How's that to end a meal? Seems hard to believe that April is just around the corner. Don't forget your April Fools Day tricks tomorrow. Take some time to enjoy the sunshine. You and the kids can take books outside and read them while enjoying the nice weather.
