Well, some of the college students have come home and probably feel like a fish out of water. For us adults, we'd love for someone to come pick us up out of our lives for three months and say 'now you have some down time.' If you have college kids, you might as well get used to the fact you will be moving them twice a year. Of course, I was told I packed way too much 'stuff' and he never used it all, but you don't want them to need something. They always want, need and use the food.

What a great way to start the summer!

It must be that the good weather is here to stay (The Everdykes have returned) :

Hi Everyone: Well we have landed back in good ole New York State. We left Florida on Tuesday morning and seeing as we are getting so old we took two nights on the road. Had a very good trip. The traffic was not too bad and we had no rain to drive thru. Gas prices went anywhere from 2.77 a gallon until we hit the good old NYS and then the first we saw was 3.03. Anyway, we had a very safe trip. Betty and Ralph

Also Jake Spencer is back home from Guam. He won't be complaining about the hot summer weather this year. (That is, if he is staying here for a while.)

Happy Mother's Day all of you Moms....here are a couple of easy recipes for making breakfast in bed.

Blueberry Muffins
From Food Network Kitchens

2 cups unbleached all-purpose flour
2 teaspoons baking powder
1/4 teaspoon fine salt
1/2 cup unsalted butter, softened, plus more for preparing the muffin tin
1 teaspoon finely grated lemon zest
2/3 cup sugar, plus 1 tablespoon for the top of the muffins
2 large eggs, at room temperature
1/2 cup whole milk
1 1/2 cups fresh blueberries, rinsed and dried

Preheat the oven to 375 degrees F. Lightly brush a 12-muffin tin with butter and set aside. Sift the flour, baking powder, and salt into a medium bowl and set aside.

In a standing mixer fitted with the paddle attachment, or with an electric hand-held mixer in a large bowl, cream the butter, zest, and 2/3 cup of the sugar until light and fluffy, about 2 minutes. Scrape down the sides of the bowl with a rubber spatula. Add the eggs, one at a time, beating well after each addition. Remove the bowl from the mixer.

Using a rubber spatula, fold the flour in 3 parts into the butter mixture, alternating with the milk in 2 parts, until just combined. Fold in the blueberries. Take care not to over mix the batter. Divide the batter evenly into the muffin tin and sprinkle the tops with sugar. Bake until golden brown, about 25 minutes. Cool muffins in the pan on a rack. Serve warm.

or what about:

Pumpkin Spiced Pancakes
Yield: 2 servings

Pecan Syrup:

1 cup maple-flavored pancake syrup
5 tablespoons pecans, toasted and chopped

Pancakes:

1 cup buttermilk pancake mix
1 cup cold water
1/3 cup canned pumpkin
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger
Nonstick vegetable cooking spray
Butter, room temperature

Pecan Syrup Preparation:

Combine maple syrup and pecans in small microwave-safe bowl. Heat in microwave on high until hot, about 25 seconds. Set pecan syrup aside and keep warm.

Pancake Preparation: In a medium bowl, whisk pancake mix, water, pumpkin, cinnamon, and ginger until just blended (do not over mix; mixture should be lumpy).

Spray a heavy griddle with nonstick spray and heat griddle over medium heat. Spoon 2 tablespoons of batter onto griddle to form each pancake. Cook for 2 minutes or until bubbles appear, then turn pancakes over and cook for 2 minutes longer. Transfer pancakes to plates. Top with butter and serve with warm pecan syrup.

There are so many fun things to do in Wayne County. We were out for the Spring Fling last weekend and enjoyed visiting friends and sitting at the beach. We are looking forward to coming out for all the other many events that are planned throughout the summer. We went to a lot of things when we lived in Sodus, but now it seems like there is so much more going on. That's great!

Have a good week. Have fun in the nice weather with your families. (Even if it's raining, you can have fun reading together and watching movies. Where's the microwave popcorn?)
