One of the desserts we enjoyed on Super Bowl Sunday was Ladyfinger Layer Cake

1 cup butter or margarine, softened
2 cups powdered sugar
4 eggs (or egg substitute)
1 (13.5 oz.) can crushed pineapple, drained
1 cup chopped pecans
2 dozen ladyfingers, split
frozen whipped topping

Cream butter and sugar until light and fluffy. Beat in eggs one at a time. Add pineapple and nuts. Mix well. Line a loaf pan with wax paper. Pack the bottom of pan with split ladyfingers, fill in holes with broken pieces. Make a layer of pineapple filling. Continue until pan is full. Cover and refrigerate 6-8 hours or overnight. Unmold onto cake plate and ice with thawed topping. Garnish with mint leaves and additional chopped pecans. Serves 8.
