Happenings
By Carolyn Adriaansen (926.4436)

'The fellow who invented the lifesaver really made a mint.'

Macaroni was brought to the United States by Thomas Jefferson. When Jefferson was the ambassador to France he developed a liking for macaroni. When he returned from France, he brought a machine back that made pasta. He is credited with making the first macaroni and cheese dish. The word 'macaroni' actually came from the exclamation made by the Italians when they saw the price of pasta the Germans were trying to sell them in the 1700's. The Italians were upset at the price and said 'ma caroni,' which meant 'but it's too dear' ... so the Germans reduced the prices.

Jan. 6, 1939 - THIRD GRADE NOTES: This week we have started work on our doll house that we are going to build. Three boys from our grade were given a crate that a refrigerator came in. This is going to form the frame of our house. We appreciate Mr. Boekhout giving us this wood to work with.

Recipe for Scrapple

1 1/2 pounds lean pork pieces
1 1/2 cups yellow cornmeal
1 1/2 teaspoons salt
1 cup cold water

Cook the pork in two quarts water until meat is tender. Cool the meat and remove the bones and fat. Chop the meat fine and refrigerate. Chill the broth.

Remove the hardened fat from the cold broth. Place four cups broth in a large saucepan and bring to a boil; add the chopped meat.

Mix the cornmeal, salt and 1 cup cold water and gradually add it to the boiling broth, stirring constantly until it thickens.

Reduce the heat to low and cover. Cook for 30 minutes. Stir occasionally, as it will stick easily to the pan.

Pour into an oiled 9x3-inch loaf pan, cover and refrigerate several hours or overnight. When very firm, cut into slices. Flour the slices and brown on both sides in hot vegetable oil. Serve with warm maple syrup or pancake syrup.

When you get to heaven, You will likely view, Many folk whose presence there, Will be a shock to you.

But do not look astonished

Do not even stare

Doubtless there'll be many folk

Surprised to see you there!
