Lobster lab and dinner at EPCS The science class at the East Palmyra Christian School performed a lab to better understand crustaceans. Science teacher Jack Darcy created the lab to be both educational and fun. This unusual and innovative lab will be submitted for consideration in a national publication. The students examined the anatomical exterior structure of the lobster. The lab included concepts relevant to the 7th and 8th grade Life Science curriculum and enrichment material from the high school biology program. Mr. Darcy prepared a mini-banquet complete with candlelight, flowers, cooked lobster, salt potatoes, etc. He gave the students gourmet pointers on how to properly extract the meat from the cooked lobsters.
