Dear Sir:

As a member of the Committee of Education, Recreation and Health of the Newark Chamber of Commerce, I am taking the liberty to write you with a request for some information.

Does your city maintain a food inspection officer or department, whose duty it is to pass on the grade and condition of various material offered for retail? If so, I would appreciate full particulars as to method such inspection takes, also with how much authority such an inspector can be invested.

Our Committee is investigating various methods followed with a view of establishing such a system in Newark. Therefore, any assistance or suggestions forwarded in the stamped self addressed envelope enclosed will be greatly appreciated.

Dear Sir:

In response to your inquiry of the 22nd, beg to advise we have no food inspector other than a "Meat & Milk Inspector", which is in charge of Dr. F.M. Dunn, a local veterinarian.

All milk which is sold in the City of Fulton has to pass an inspection, and each month the dairies of all persons selling milk in the city have to be inspected. In addition to the test for tuberculosis, they also use a score card system, and each dairy must score at least 85%. This score is graded as to quality of milk, care of milk and utensils, etc.

In regard to the meat inspection, this applies only to meat which is purchased locally from farmers, as all Western meat is inspected before it is shipped in here. Before the meat is taken to the butcher it is taken to Dr. Dunn's office and he examines it and if found to be of proper condition to offer to the public he places his stamp upon it. If it passes the inspection and is stamped it is then ready to be offered for sale by the butcher.

Dr. Dunn receives for this service $1,200.00 a year.
